Like corn, nothing says summer like a fresh tomato and at Brigham and Applefield Farms you can currently buy tomatoes in a wondrous variety of shapes, colors and sizes. And if you aren’t a canner, you can still capture summer using your freezer. Two easy ways are to peel and seed for use in soups and other dishes (dip them in boiling water to easily remove skin) or slow roast tomato slices or halved cherries with a bit of salt for winter use on sandwiches.
